I find scalpel hard to use.

I would like to be able to draw on the surface of polygon without having to connect the dots. Does this make sense? Not sure I am making myself clear.

One can dream - but this is far from reality with a subdivision modeler.
BTW: You don´t have to connect points as long your first and last click remains to edges of the same polygon.

jc59 -- you might like to look at Curvy3d (google it). It seems almost purpose built for you
